Vegan Scallops. First time trying trumpet mushrooms and I didn’t know what to expect. It could definitely fool someone, it has a meaty bite and soaks up flavor really well. Three together a quick dinner, seared the mushrooms in olive oils then tossed in brown butter with s&p. Sautéed some shallots, garlic, mushroom tops, and kale, then added in some navy beans, lemon paste (sub for lemon juice), umami mushroom powder (optional), dill, parsley, tarragon, and a handful of shredded Parmesan.
