I’m still having a moment with these air fryer fries. I’m a full on convert—air fryers are a kitchen need item. Sure my oven can do the same thing, but it heats up to temp in under 5 minutes and my oven takes over 15 minutes. I whipped up this batch of fries and curry mayo in 25 minutes!
My quick hack is to slice Yukon gold potatoes evenly and put them in a microwave safe bowl and cover with water, and microwave for about 5 minutes until they’ve softened a bit but still firm. I drain and leave to dry then toss in oil, and into the air fryer on 425 for 20-30 minutes tossing midway. The real revelation here is the lime zest crushed with flaked sea salt and sprinkled over top after the fries are done crisping. I made a quick mayo dip inspired by Ottolengi with some hacks—combine store bought mayo 1/3 cup, 1/4 tsp crushed curry leaves (optional), 1/4 tsp cardamon powder (optional) and a pinch of curry powder, salt and 1 tbs of garlic olive oil infusion I had left over (sub in some garlic powder or a small grated garlic clove).
