Plantain Porridge

Some meals are so simple, that they transport you back to simpler times. Plantain Porridge is one of those dishes for me. If you’ve never had it before and you’re team #plantainlovers then it is definitely worth a try. It has the subtle sweetness of a ripe plantain and the creaminess of oatmeal porridge.


I don’t have an exact recipe for this but this should get you started. In a blender combined 2 green plantains, cut into 1 inch pieces, about 3 tbsp of flour, 1/4 tsp nutmeg, and 1/2 cup of water. Blend into a loose paste. Boil about 2 cups of water with 1/2 tsp cinnamon or 1 cinnamon stick. Once the water comes to a boil, pour in the plantain mixture into the water, stirring all the while. It will begin to thicken up. Keep stirring to prevent lumps. Cover and let it simmer for about 15 minutes, then add in about 1/3 cup condensed milk, 1/2 cup milk, a splash of vanilla, a mix of white and brown sugar to sweeten and a pinch of salt to bring out the sweetness. Adjust the above until you get the sweetness and creaminess you desire.
