Green Soup (Salads the remix edition)

When you planned to eat salad, but now you’re in the mood for hot food. Creamy Lettuce Soup. Yeah I said lettuce. This was an unusual one for me, but is a genius way to use lettuce that’s been neglected in the fridge. Any lettuce except iceberg could work for this. Trust me it tastes way better than you’d think. I’ve made this several times now, and the flavor is fresh, vegetal, and a bit peppery. Really surprisingly good.

Ingredients

2 tablespoons butter

1/2 large onion

Couple cloves of garlic, sliced

2 cups veggie stock or bouillon

8 ounces lettuce, removing core

1/4 cup parsley leaves

1/3 cup heavy cream, optional

salt and pepper to taste

1-2 tsp fresh lemon juice, for brightness; or finish with a lemon olive oil


Melt butter and add onion and garlic and cook until softened. Add stock and lettuce and cook until tender about 8-10 minutes. In the last minute throw in the parsley and heavy cream if using, lemon juice, then blend until smooth.
