Harissa Roasted Cauliflower

Harissa Roasted Cauliflower from @ottolenghi is an instant winner. For this one I made a homemade harissa (=game changer).


You can quick hack your way to this beauty by amping up some store bought harissa, adding in some rose petals, and a good 1/3 cup of olive oil. Blanch the cauliflower for about 4 minutes, drain, coat in harissa oil, add in a few garlic cloves, a white onion and some sweet and hot peppers. Bake for about 40 minutes on 400F and baste with the oil every now and again until it’s cooked through and slightly crispy. Before serving squeeze a bit of lemon juice and a handful of cilantro leaves.
